A recipe for Madras Chicken Curry from UnJust Desserts

Some readers have tried the recipes in the crime trilogy that is set on the Mornington Peninsula and suggested that I also publish them on my blog. Here is the very first recipe from “UnJUst Desserts”.
It is probably the most complex recipe in all three novels.

Not Just Desserts Madras Chicken Curry:
4tbsp vegetable oil
4-6 green cardamom
1 cinnamon stick 6-8 curry leaves
3 whole star anise
1 lge onion finely chopped
1 piece fresh ginger
4 cloves garlic
4 tbsp. mild curry paste
1 tsp. turmeric
1 tsp. five-spice powder
1.3kg. chopped chicken.
400 gms. canned tomatoes
100 gms. creamed coconut or yoghurt.
1/2 tsp. sugar
salt to taste
chopped coriander leaves
2 chopped chillies.
Method: Make paste by mixing dry spices, chillies, extra garlic and ginger and frying these in oil until quantity reduces. Remove excess oil and refrigerate. Coat chicken pieces in flour then brown in oil. Fry onion, garlic and ginger. Add paste and other ingredients. Simmer for 40 minutes. Stir in coconut or yoghurt and chopped coriander.
